Sea-Nut Brittle ~ Candy Chew

Here’s a delicious way to get more seaweed into you life!

1 ½ cup Raw Honey

½ cup Pure Maple Syrup

1 cup of toasted seaweed of choice (chopped/ground in coffee mill~ wakame or kombu is my favorite)

3 cups of seeds & nuts of choice (I used black and white sesame seeds, almonds, pistachios, milk thistle seeds & sunflower seeds)

Small cookie sheet or glass casserole dish


Heat honey over medium heat for 10 minutes. Add the nuts, seeds and seaweeds & maple syrup to honey and stir well. Heat for another 20 minutes.  Line you pan or dish with greased parchment paper. Pour brittle mixture onto dish and spread out evenly. Allow to set- place in the fridge if you like. Break up into pieces and enjoy! To get the brittle quality you need to use a candy thermometer and heat the honey to 210 degrees for the first 10 minutes ( you need a candy thermometer) and then after you’ve added the rest of the ingredients, heat until 310 degrees for another 20 minutes. I opted not to do this as I wanted to keep the “rawness” of the honey as much as possible.
