Droopy Granola Recipe

I got this recipe from a friend I used to work with long ago at the Cafe On The Banke by the Stawberry Bank Museum in Portsmouth. Phil was one heck of a cook- Oh and I also used to call him Droopy Dog- you know the elevator dog from the Loony Tunes? The one that was always sad & serious and would ask “Going up?”. Anyway my friend Phil always reminded me of him cause he was always grumpy about something. Lol! Hence the name of this amazing granola.

What You’ll Need::

8 Cups Rolled Oats

2 Cups Seeds (sesame, poppy, shelled sunflower, pepita)

1 Cup Nuts (almonds, walnuts, cashews, hazelnuts, brazil nuts… )

1 Cup Unsweetened shredded coconut

1/2 Cup Honey or Brown Rice Syrup

1 cup butter (or coconut oil)

1 cup Maple Syrup (Or Brown Sugar when You’re being bad! :))

1-2 Cups Dried Fruit (chopped apricots, candied ginger, cherries, currants, raisins, craisins, mulberries…)

optional ~tsp Cinnamon

optional ~1 tsp Cardamom

~Mix oats, seeds, nuts & coconut together in a bowl.

In a separate bowl, melt butter/coconut oil, add maple syrup & honey. Mix well.

Pour butter/oil/sweetener blend into the bowl with the nuts & oats. Blend super-dy-duper-dy well.

Spread your uncooked granola evently onto a cookie sheet.

Cook at 350 degrees for 10 minutes. Take out and cook granola.

Scrape/scoop your now cooled granola into a bowl, add dried fruit, mix well- voila! The best granola ever.

Store in a air tight container.

I like to enjoy mine with hemp milk! Yummmmm
